- 2 cups all-purpose flour
- 1 cup whole wheat flour
- 1tsp baking soda
- 1tsp salt
- 1/2tsp baking powder
- 1/2tsp ground cinnamon
- 1/2tsp ground nutmeg
(or for those two you can just substitute 1tsp pumpkin pie spice, which is what we did)
- 2 cups sugar
- 1 cup vegetable oil
- 1tbsp vanilla extract
- 4 medium or 3 large bananas, verreh ripe
Got everyfing? Good! Away we go!
Put all the wet stuffs and the sugar in one bowl. Put all the rest of the dry stuffs in a second bowl. Make sure you sniff the wet bowl after you add the vanilla - I always do, it is a great smell.
Grab your 1/4 measuring cup, and use it to make batter scooping easy! We find that wifout it, we gets batter drips all over the place and it is a little bit hard to keep the size of the muffins the same.
So fill up your muffins now! We like to use these pretteh colored paper liners, but you can also just use cooking spray directly in the muffin pan if you happens to be out of pretteh papers.
